Although legislation exists for the protection of the public in matters concerning the preparation and service of food and drink, the satisfactory maintenance of a high standard of cleanliness in public houses ultimately rests with the owners and tenants. The design of the public house and its fittings, the provision of adequate ventilation and sanitary accommodation and, above all, the education of the worker, are important factors contributing to the continued achievement of this high standard. The handling of food in public houses, and major problems associated with glass washing at rush hours, present especial difficulties, and complete eradication from the premises of vermin, including flies, is essential. Stress is laid on the desirability of friendly co‐operation between the licensee and the local Public Health Officer.
