The predominant Scandinavian barley variety is Kenia, but some promising new hybrids (Carlsberg, Herta, Heimdal) have been introduced. Particular attention is given to barley grading and, of the grain drying systems in use, the vacuumdrum method is of particular interest. Steeping is, almost invariably, in circular, cone‐bottomed tanks with aeration. Malting systems include the use of flooring with which mechanical aids may be incorporated, box malting on the Saladin system, though with a variety of modifications, Gailand and box drums; comparative features of the different systems are discussed. Both horizontal and vertical kilns are in use, and the circulating box‐kiln is becoming increasingly popular. Much attention is given to automatic control of operations throughout the malting process.
