ON THE RELATION BETWEEN THE PERMANENTLY SOLUBLE NITROGEN OF MALT AS FOUND IN LABORATORY WORTS AND THE PERMANENTLY SOLUBLE NITROGEN OF BREWERY WORTS FROM THE SAME MALTS

In order to establish the relationship between the nitrogen of malts as found in laboratory worts and the nitrogen in brewery worts made from the same malts, the permanently soluble nitrogen was determined in the malts used in 27 brews and in the brewery worts obtained from those malts. The results show that in the conditions existing in one brewery in 1942 more nitrogen was rendered soluble in the mash tun than in the laboratory mash in 26 out of 27 worts, that the increase varied from 4 to 32 per cent . and that the average value of the increase was 15 per cent .
