From his experience the author is inclined to think that with English beers more regard is paid to appearance and stability than to the important matter of flavour. The various ways in which hop resin may interfere with brewing are discussed and the manner in which they maybe avoided are described. The low soluble nitrogen content and resulting weak diastatic power of malts of the last two years are dealt with. A great deal of interesting analytical data relating to hops and malts is recorded.
