Partial alkaline hydrolysis of polygalacturonic acid methyl ester gives products in which the COOH‐ and COOCH 3 ‐groups are distributed alternatively along the chain molecule. Partial enzymatic hydrolysis, on the other hand, gives products in which the COOH‐ and COOCH 3 ‐groups, respectively, are grouped together in blocks.
