Some critical comments on the legislative control of flavourings in food

For many reasons flavouring agents have to be considered as a special type of food additives. A general system for their approval is still lacking, largely because of insufficient toxicological data. In addition, consumers want a comprehensible definition of flavouring agents and the scope for their use in foods. Work done in this field and existing and new regulations required to improve the legislative control of flavourings in food are discussed.
