After an introductory note on the development of food and food risks, a short historical overview is presented on the implementation of flavour regulations in the United States and the European Community. With the emergence of global markets the establishment of global inventories of flavouring materials and adjuncts is proposed which should be reviewed by an Independent Global Expert Panel.
