Abstract Bound volatiles of dried clove buds and fresh green clove leaves were studied by Svendsen's method, using both β‐glucosidase and α‐amyloglucosidase for enzyme hydrolysis. Apart from aliphatic alcohols and monoterpene alcohols, eugenol, isoeugenol, farnesol and nerolidol were identified as aglycones.
