All the possible stereoisomers of N ‐(2′‐methylbutyl)pyrrolidine 1 and N ‐(2′‐methylbutyl)‐2‐methylpyrrolidine 2 , which have the characteristic roast odour of seafood, were synthesized. As a result of odour evaluation of all the isomers, we found that each isomer has a different and characteristic odour. Copyright © 2003 John Wiley & Sons, Ltd.
