An equation to determine the thermal diffusivities of spherically shaped products being cooled is developed. To verify this model, spherical products, i.e., tomatoes, pears, peaches, apricots and plums, were subjected to immersion cooling at the water medium condition having temperature of 1°C, and flow velocity of 0.05 m/s. This equation which uses temperature measurements at the centre of spherical product is very simple and accurate. The calculations can even be done by a hand calculator.
