Sodium nitrite in acidic solutions produces a voltammetric cathodic wave starting from −0.5 V (vs. Ag/AgCl) in the presence of a small amount of cytochrome c (cyt c), in which cyt c works as a catalyst for the electroreduction of nitric oxide produced by the disproportionation reaction of nitrite. Hemoglobin (Hb) and myoglobin (Mb) are also effective as catalysts for this type of reaction.
