Structured lipids enriched with unsaturated fatty acids produced by enzymatic acidolysis of silkworm pupae oil using oleic acid (pages 879–889 of this issue) Xing‐Yu Zhao, Xu‐Dong Wang, Xi Liu, Wei‐Jie Zhu, Yi‐Yuan Mei, Wen‐Wen Li and Jun Wang DOI: 10.1002/ejlt.201400438 Novel structured triacylglycerols (STAGs) catalyzed by Lipozyme RM IM with low palmiticacid (PA) and rich in oleic acid and linoleic acid were synthesized from silkworm pupae oil. Under the optimal conditions, the content of PA and stearic acid decreased from 41% to 20% in sn ‐1, 3 positions, and the content of unsaturated fatty acids (UFAs) increased from 61% to 78%. The prepared STAGs could be added into human milk fat substitutes, which may be useful as nutrition enhancers of infant formula.
