Bench scale experiments and computer simulations of transient crystal size distributions obtained in a 1.4 m 3 sucrose crystallizer, which prove the existence of nuclei stock, are presented. This stock represents a large number of non‐growing nuclei, which can be activated at increased supersaturations. The nuclei stock attenuates the dynamic behaviour of crystallization process.
