Certain classes of products feature structurally compact and mechanically stable crystal layers, which are able to stand without being supported by the crystallizer plates. Such crystal layers may move away from the warming crystallizer plates, which in turn interferes with the effectiveness of sweating. Using a simple countermeasure like inserting holders into the crystallizer such negative effects can be avoided to a large extent.
