The back cover picture shows how evolving biocatalysts is an essential part of the emerging bioeconomy. In their paper on p. 592 ff, S. Panke and co‐workers report how they divergently evolved a D ‐tagatose epimerase into much improved catalysts to produce D ‐psicose from fructose and L ‐tagatose from L ‐sorbose, identifying the underlying molecular reasons from detailed crystal structures.
