The inside cover picture shows the sucrose isomerase from Protaminobacter rubrum. Sequence and structure alignments in combination with mechanism‐based docking studies (close‐up view) revealed target sites for site‐directed mutagenesis, thus enabling the synthesis of the trisaccharide isomelezitose in up to 70 % yield.
