The ERRC food process simulator computer program is described. With the potato flake process as a prototype, we show that the simulation computer program predicts composition and texture. It is written in a user friendly Fortran, requiring no Fortran knowledge by the user and can be used with an IBM* compatible PC. The program can be expanded, with appropriate models, to other food processes.
