Abstract The volatile components in the headspace of five varieties of mango have been examined by concentration on Tenax GC. Fifty‐four compounds were identified by gas chromatography/mass spectrometry. Varieties described by local consumers as unpalatable were found to contain high concentrations of myrcene.
