As presented by Muhammad B. K. Niazi and Antonius A. Broekhuis on page E‐143 , the cover shows a scanning electron microscopy (SEM) image of spray dried corn starch powder. In contrast to the spherical nature of virgin starch granules, complete dissolution followed by spray drying results in shrunk and partly collapsed particles. The observed phenomena can be explained by the initial formation of a dry and amorphous skin around a sphere of wet material. Upon diffusion and evaporation of the residual moisture the skin collapses to form massive but deformed particles. Compression experiments with the powders confirmed the absence of hollow particles usually formed in such spray drying operations.
