The number of methyl groups on the acyl groups of phosphatidylcholines 1 (R 1 –R 4 = H, CH 3 ) determines their surfactant characteristics. Differential calorimetric investigations show that little or even no branching leads to ordered gel phases. The behavior of the compounds at the water–air interface is also determined by these structural factors.
