In article number 1907932, Raffaele Mezzenga and co‐workers introduce an amyloid fibril aerogel as a sustainable, efficient, and affordable solution for removal of organic pollutants from water. The aerogel is easily produced from whey protein and exhibits excellent removal efficiencies for pesticides, phenolic compounds, pharmaceuticals, dyes, and organic solvents. The proposed aerogel has a high stability, and can be reused for several consecutive cycles after acid regeneration.
