The traditional process of soybean protein extraction had the potential to be substantially improved through the development of a new generation of high‐performance centrifugal decanters, the Prodecanter. The extraction is performed with a high degree of solid content and without defoamer. The purity of isolates generated in this fashion reaches 92 %. The protein yield, at up to 80 %, is considerably higher than that achieved with the traditional method.
