Detection of the radical and reduced forms of α‐(4‐pyridyl 1‐oxide)‐ N‐tert ‐butylnitrone/pentyl radical adduct formed on reaction of an oxidized linoleic acid with ferrous ions using high performance liquid chromatography with electrochemical detection

Pentyl radical was detected in the reaction mixture containing an oxidized linoleic acid using high performance liquid chromatography with electrochemical detection (HPLC‐ED) in combination with spin trapping with α‐(4‐pyridyl 1‐oxide)‐ N‐tert ‐butylnitrone (4‐POBN). Both reduced and radical forms of 4‐POBN/pentyl radical adduct were detected in the elution profile of the HPLC‐ED set‐up. Concentrations of the radical and reduced forms of 4‐POBN/pentyl radical adduct which form in the reaction mixture of an oxidized linoleic acid with ferrous ion were 590 nmol/L and 11 nmol/L, respectively. Chlorogenic acid, a polyphenol, inhibited the formation of both reduced and radical forms of 4‐POBN/pentyl radical adduct.
