Synergistic effects of polymer mixtures in solution can have a strong influence on the flow behaviour and are of decisive importance in applications. The biopolymer mixture locust bean gum/κ‐carrageenan is used as an example to demonstrate that rheo‐ optical techniques are very well suited for detecting such phenomena and helping to explain them. Moreover, it is shown that in certain cases rheo‐optical investigations are ten times more sensitive than mechanical methods.
