HACCP (Hazard Analysis Critical Control Point)has been internationally recognized as a logical tool towards a more modern, scientifically based inspection system. The main sector where HACCP finds application is in the processing of safe food. The influence of the application of the HACCP system in Greek industry was examined as a function of important process parameters (e.g. cost, training programmes, employees' behaviour). Problems encountered during the implementation of HACCP were identified and actions to overcome these problems were proposed. Merging the HACCP system with a quality assurance programme will render HACCP more effective in industry. Copyright © 1999 John Wiley & Sons, Ltd.
