Free and glycosidically bound volatiles of cardamom ( Eletteria cardamomum Maton var. miniscula Burkill)

The bound aroma compounds from fresh green cardamom ( Eletteria cardamomum Maton) were isolated by adsorption on Amberlite XAD‐2. The free volatiles were eluted with ether:pentane (1:1) and the bound compounds with methanol. After hydrolysis of the latter fraction with β‐glucosidase, the aglycones were identified by GC and GC–MS. The major compounds in this fraction were 3‐methylpentan‐2‐ol, linalol and the cis ‐ and trans ‐isomers of nerolidol and farnesol. Copyright © 1999 John Wiley & Sons, Ltd.
