Studies that have been performed by MALDI mass spectrometry in the field of non‐enzymatic protein glyco‐oxidation are briefly reviewed. The results obtained by in vitro and in vivo experiments demonstrate the power of this technique, which is able to give information on the number of sugar molecules condensed on specific proteins and, consequently, represents a new and specific diagnostic tool in diabetes control. © 1997 John Wiley & Sons, Ltd.
