espanolEl objetivo fue determinar la disponibilidad a pagar un sobreprecio por parte de los consumidores por chocolates artesanales. Los datos se obtuvieron de encuesta a jefas(es) de hogar. El chocolate artesanal incorpora saberes transmitidos por generaciones, lo que resulta en la posibilidad de agregacion de valor. El 55 % de los habitantes conoce y consume chocolates amargos y semiamargos artesanales, y el 92 % estaria dispuesto a pagar un sobreprecio. Las variables significativas (p ≤ 0,05) que explican la DAP un sobreprecio son la escolaridad, el nivel de ingreso, la calidad del cacao y el tipo de tostado. EnglishThe objective was to determine the willingness to pay a price premium from consumers for artisanal chocolates. The data was obtained from a survey of household heads. Artisanal chocolate incorporates knowledge transmitted by generations, which resulted in the possibility of adding value. 55 % of the interviewed know and consume bitter and semi-bitter handmade chocolates, and 92% would be willing to pay a premium. The significant variables (p ≤ 0.05) that explain the DAP a premium are schooling, household income, the quality of the cocoa and the type of toast.
