Composition biochimique et phytochimique des tourteaux des fruits du safoutier (Dacryodes edulis) de Côte d’Ivoire

Les tourteaux de safou obtenus apres deshuilage ne sont generalement pas exploites. C’est pour cela que cette etude a ete menee afin de les valoriser. Pour ce faire, les tourteaux de la pulpe et de l’amande des fruits du safoutier ( Dacryodes edulis ) ont ete etudies pour leurs compositions biochimiques et phytochimique. Ces tourteaux ont ete obtenus apres deshuilage de la pulpe et de l’amande (extraction sous presse, maceration et extraction au soxhlet). L’analyse des resultats a montre que les differents tourteaux de la pulpe contiennent en moyenne 12,01% de matieres grasses, 9,75% de proteines et 26,93% de glucides. Quant aux tourteaux de l’amande obtenus uniquement apres maceration et au soxhlet, ils renferment 4,65% de matieres grasses, 5% de proteines et 20,06% de glucides. Cette analyse a indique aussi que les mineraux tels que le phosphore, le potassium, le calcium, le manganese et le fer ont une teneur qui varie de 0 a 2 mg/100g MS dans les tourteaux de la pulpe et de l’amande. De meme, la teneur en zinc, en magnesium et en cuivre varie de 1 a 5 mg/100g MS. Concernant la teneur en sodium, elle est comprise entre 20 et 28 mg / 100 g de MS pour les tourteaux de la pulpe contre 14 et 17 mg /100 g de MS pour les tourteaux de l’amande. De plus, cette etude a permis de reveler la presence de polyphenols, de flavonoides, d’alcaloides, de terpenes et de sterols dans les tourteaux. En outre, le tourteau de l’amande degraissee par maceration contient une teneur elevee en polyphenols totaux (1,81 mg/g EAG) et en flavonoides totaux (3,01 mg/gEQ) que les autres tourteaux. En somme, la presence de composes bioactifs dans les tourteaux de safou pourraient justifier son utilisation dans le domaine alimentaire et medicinale. © 2018 International Formulae Group. Our study aim was to promote them. To do this, the pulp and almond cakes from fruit of Dacryodes edulis were studied for their biochemical and phytochemical composition. These cakes were obtained after oil extraction by pressing, maceration and soxhlet.The analysis of the results showed that the different cakes of the pulp contained on average 12.01% of lipids, 9.75% of proteins and 26.93% of carbohydrates. As for, the almond cakes obtained after maceration and soxhlet, contained 4.65% of lipids, 5% of protein and 20.06% of carbohydrates. The analysis also indicated that mineral contents of pulp and almond cakes such as phosphorus, potassium, calcium, manganese and iron varies from 0 to 2 mg/100g DW. Then, the content of zinc, magnesium and copper varies from 1 to 5 mg/100 g DW. Sodium content range from 20 to 28 mg/100 g DW for pulp cake and 14 to 17 mg/100 g DW for almond cake. In addition, results revealed the presence of polyphenols, flavonoids, alkaloids, terpenes and sterols in cakes. Pulp cake obtained after oil extraction by maceration had the higher polyphenols (1.81 mg/g GAE) and flavonoids (3.01 mg/g QE) contents than other cakes.
