Determination of plasmatic cortisol for evaluation of animal welfare during slaughter

The plasmatic cortisol levels of 60\udeight-month-old calves (Charolais breed)\udwere measured as stress indicators resulting\udfrom two types of slaughter: traditional and\udreligious rite. The plasmatic cortisol levels\udwere evaluated during three different stages\udof their productive life: during growth, after\udtransport and during slaughter. The thirty\udcalves slaughtered after stunning showed\udplasmatic cortisol values of 4.85±3.2;\ud36.36±12.2 and 45.08±14.1 nmol/L, during\udgrowth, in the slaughterhouse stables and\udduring exsanguination, respectively.\udConversely, the average values found in the\udthirty calves subjected to ritual slaughter\udwere 2.96±1.2; 31.65±25.4 and 68.70±30.6\udnmol/L. The results of the study showed\udthat animal welfare should be improved in\udboth forms of slaughter
