The State of Espírito Santo concentrates the biggest industrial park of ornamental stone processing in Brazil. This research was done in the city of Nova Venécia-ES known as the national capital of granite. The methodology consisted of an exploratory case study. This study aims to analyze the percentage of material loss in the ornamental stone processing in the sawing / unfolding stage of the block. The results were correlated with the physical features and variable properties of the process in order to understand the behavior of each material in the productive process and to draw a profile of losses for different typologies of processed rocks. It is, therefore, a tool of a pragmatic nature that can be used in the management / planning of the activities of an industrial plant for the processing of ornamental stones.
