For safe food production, quality tools can be used in the production process or inspection control activities in the final product. However, it is important that the company has not only punctual improvement actions, but a management model that provides for compliance with procedures and provides improvement in a systematic way. This paper aims to demonstrate the importance of the FSSC 22000 scheme (model for food safety management) to ensure the safety of processes in a sugar refining industry. For this purpose, a literature review was carried out, based on a case study, through exploratory research and technical visits at a refinery of a sugar and alcohol industry, which has already implemented a plan for the analysis of hazards and critical control points ( (HACCP) and ABNT NBR ISO 9001, but opted for certification in the FSSC 22000 model. It was possible to observe the effectiveness of the FSSC 22000 model in guaranteeing the safety of the products of the sugar and alcohol industry, providing better results to the organization's management system, even with existing quality initiatives.
