Determination of Some Biochemical Properties of Saanen Goat Milk

The purpose of this study is to characterize the biochemical parameters of Saanen goat bred in Turkey. On the basis of this aim, elemental, fatty acid (FA) and chemical parameter levels of the Saanen goat milk samples were measured by Inductively Coupled Plasma Atomic Emission Spectrometer (ICP-OES), Gas Chromatography (GC), and Foss Electric (FT-120) milk analyzer, respectively. Major elements in Saanen milk were determined as calcium (Ca) 1212.87 mg L-1, magnesium (Mg) 124.37 mg L-1, phosphorus (P) 816.87 mg L-1, and potassium (K) 1557 mg L-1. The chemical composition of the Saanen milk was found as 11.14% total solids, 8.06% non-solid fat, 3.04% protein, 4.25% lactose, 2.58% casein, and 3.60% fat. Proportions of total FAs were found as saturated FAs (ΣSFA) 64.65%, monounsaturated FAs (ΣMUFA) 25.93%, polyunsaturated FAs (ΣPUFA) 9.42%. In conclusion, the results of this study that the potential nutrient profile of Saanen goat milk is of great significance to human nutrition.
