The objectives of this article are to characterize the strategy of postponement, to describe its application in a food processing agroindustry and to identify, from literature review and case study, motivations, benefits and favorable factors for its adoption by the segment investigated. The case study was developed in a food processing company, in the interior of the state of Sao Paulo. It was concluded that the main motivations for adopting the postponement strategy are: seasonality of the raw material, uncertainty regarding the variation in the specifications of the demanded products, economy of scale and cost of production and storage.
