Macroelement contents and chemical composition of Lactarius deliciosus (l.) Collected from Batak mountain in Bulgaria

Lactarius deliciosus (L.), commonly known as the Saffron milk cap, red pine mushroom is one of the best known members of the large milk-cap genus Lactarius in the order Russulales. L. deliciosus grows under the acidic soil of conifers and forms a mycorrhizal relationship with its host tree. Lactarius deliciosus was rich in carbohydrates (85.87 g 100 -1 g -1 dw), followed by proteins (6.95 g 100 1 g -1 dw), ash (4.75 g 100 -1 g -1 dw) and fat (2.42 g 100 -1 g -1 dw). Also moisture (85.75%) and total energy (1667.56 kJ 100 -1 g -1 dw) were calculated. The concentrations of macro elements : K (19498.20 ± 1224.56 mg kg -1 ), Na (64.75 ± 6.19 mg kg -1 ), Ca (255 ± 15.78 mg kg -1 ), P (3812.87 ± 365.89 mg kg -1 ) and Mg (645.27 ± 52.54 mg kg -1 ), were assayed.
