An overview is given of various biotechnical carbohydrate modifications. Fermentation and bioconversion processes, based on carbohydrate substrates for production of mono‐, di‐ and oligosaccharides and the microbial synthesis of various useful polysaccharides are discussed as well as the microbial/enzymatic hydrolysis of polysaccharides into valuable oligomers or di‐ and monomeric sugars.
