
A novel endo‐β(1,4)‐ d ‐glucuronidase activity in Mucor rouxii

Extracts from the fungus Mucor rouxii contain an enzyme activity which can degrade the homopolymeric β(1,4)‐ d ‐glucuronan (mucoric acid) of the fungal wall. The enzyme can also degrade the homopolymeric glucuronan domains of mucoran, a complex polyuronide of the Mucor wall. The enzyme is active at neutral pH and has an estimated M r of 27 500. The major product of digestion is a disaccharide, suggesting an endolytic mechanism.
