Physiological changes during adaptation of a salt‐tolerant soy‐yeast, Saccharomyces rouxii to salt stress were demonstrated. Immediately after transfer from a conventional medium to a medium containing 18% NaCl, leakage of potassium from the cells occurred, subsequently followed by an increase in intracellular glycerol level and in the ratio of intracellular to extracellular glycerol.
