The title compound, C 8 H 8 O 3 , is an acid‐protecting group used in the synthesis of peptides and as an accelerator in polymerization reactions. Its oxidation product, piperonal (heliotropine), is used in the flavouring and perfume industries. All the non‐H atoms, except the O atom of the hydroxyl group, are coplanar (r.m.s. deviation 0.028 Å). The crystal packing is stabilized by an O—H...O hydrogen bond.
