本研究的目的是分析1982-2015 年中国20 岁及以上成人的谷类 和膳食纤维摄入状况、特点及消费趋势。数据来自五轮中国居民营养 与健康调查的膳食数据膳食数据的收集均采用连续3 天家庭食物称 重法和24 小时膳食回顾法。结果表明2015 年中国20 岁及以上成人 人均谷类食物摄入量为281.1 克/日(大米145.6 克/日、小麦粉120.7 克/日、其他谷类14.8 克/日)膳食纤维摄入量为9.7 克/日其中3.8 克 来自谷类食物约占成人膳食纤维总摄入量的40%我国成人膳食纤 维的另一个主要来源是蔬菜和水果。自1982 年以来中国居民的谷类 和膳食纤维摄入量呈下降趋势而精制谷物的消费比例增加。为了促 进中国居民达到全谷物和膳食纤维的推荐摄入量建议增加全谷物产 品的供应以及公众宣传教育。
