We present a supersymmetric model of dark energy from Mass Varying Neutrinoswhich is stable against radiative corrections to masses and couplings, and freeof dynamical instabilities. This is the only such model of dark energyinvolving fields with significant couplings to any standard model particle. Webriefly discuss consequences for neutrino oscillations and solar neutrinos.Comment: 22 pages, 4 figure
