This study was carried out to investigate the anti‐hypercholesterolemic effects of Pine nuts oil in hypercholesterolemic rats. Sprague‐Dawley male rats were randomly assigned to one normal diet and four high cholesterol diet groups which contained 2% cholesterol. During 6 weeks cholesterol diet, the groups of high cholesterol diet were classified to nomal diet (ND), high cholesterol high fat diet (HCHF), high cholesterol high fat+simvastatin(HCHFS), high cholesterol high fat+pine nuts oil 7%(HCHFP7), and high cholesterol high fat+pine nuts oil 15%(HCHF15). The liver weights change of all high cholesterol diet were higher than the normal diet group. But there was difference of change between HCHF and HCHFP7 diet groups. Concentration of serum HDL‐cholesterol were significantly increased in HCHFP7 compared with HCHF. Concentration of serum LDL‐cholesterol were significantly decreased in the groups of HCHFP15 diet compared with HCHF. This study indicate that the diet of Pine nuts oil can ameliorate the status of HDL‐cholesterol and LDL‐cholesterol in high cholesterol diet rats. In view of these results, Pine nuts oil is expected to be an effective material for the anti hypercholesterolemic.
