Granulation of quantum matter -- the formation of persistent small-scalepatterns -- is realized in the images of quasi-one-dimensional Bose-Einsteincondensates perturbed by a periodically modulated interaction. Our presentanalysis of a mean-field approximation suggests that granulation is caused bythe gradual transformation of phase undulations into density undulations. Thisis achieved by a suitably large modulation frequency, while for low enoughfrequencies the system exhibits a quasi-adiabatic regime. We show that thepersistence of granulation is a result of the irregular evolution of the phaseof the wavefunction representing an irreversible process. Our model predictionsagree with numerical solutions of the Schr\"odinger equation and experimentalobservations. The numerical computations reveal the emergent many-bodycorrelations behind these phenomena via the multi-configurationaltime-dependent Hartree theory for bosons (MCTDHB).
