1.はじめに トラフグの肝臓(フグ肝)は,従来伝統食品として 食されていたが,中毒の報告もあることから,厚生省 環境衛生局長通知(昭和 58 年 12 月 2 日)により,飲 食店で扱うことができず,現在は廃棄されている.し かし,飼料を考慮し,陸上養殖などによって,無毒が 証明されたフグが生産されるようになった(野口ら, 2004,Noguchi etc., 2006).著者らは無毒のフグ肝に ついて,成分およびテクスチャーなどの食料価値を検 討し(大貫ら,2006,峯木ら,2009),フグ肝が脂肪 を 70%含む食品で,n-3 系脂肪酸,ビタミン A およ びビタミン E を多く含み,サプリメントとしての活 用も期待できることを報告した.しかし,ゆでたフ グ肝を用いた官能評価では,いずれの項目でも,高い 評価は得られなかった(大貫ら,2006).特ににおい, 脂っぽさの項目が好まれない傾向にあった.フグ肝は グルタミン酸を多く含んでいる(峯木ら,2009)可能 性があることから,調理方法により,食べやすくなる 陸上養殖された無毒化トラフグの肝臓の調理法別食味特性
