( ) 1.はじめに 近年,食の外部化と呼ばれる食生活の変化が著し い .これに伴って,生鮮野菜の家計での購入量は 1970 年代後半から減少している.しかし,すべて の野菜が減少しているわけではない.この違いは, 野菜によって調理の手間に違いがあるためであると 考えられる.食の外部化の要因として指摘される賃 金率の上昇は,調理に手間のかかる野菜の調理コス トをより大きく上昇させるためである .また,消 費者の健康志向の高まりや食事メニューでの洋風料 理の増加など,近年の消費者の食料消費における嗜 好の変化も影響していると考えられる. これまで,食の外部化の観点から生鮮野菜を対象 に分析した研究は少なく,たとえば住本・草苅[6] は生鮮野菜の調理の手間の違いを考慮しているだけ であり,生鮮野菜について調理の手間の違いと消費 者の嗜好の変化の両方を考慮して分析したものはな いとみられる. そこで,本稿では,食の外部化要因である賃金率 の上昇と消費者の嗜好の変化から生鮮野菜の家計需 要を考察することを課題とする.そのため,調理の 手間の違いと消費者の嗜好を考慮して 2つに分類し た生鮮野菜を含む食料,非食料,余暇時間を対象と して需要体系分析を行う .
