1. 濁度 の測定 サ ンプル10m1を 試験管(φ18mm)に と り,ウ ォー ターバス中 で,80°C,10分 間の加熱を行い,す ぐに比色 計(エ ルマ社光電比 色計AE-11)で660nmの 吸光度測 定を行 い,濁 度 とした。 また簡 単な方法 としては,加 熱 後 肉眼で判定 し,+,-で 表現 した。 2. リン酸の定量 サ ンプル を過 塩素酸灰化法4)で無機 リンと し,こ のサ ンプル を適 当に 希釈 して,オ ル トリン酸 として 比色定 量5)した。 3. Ca,Mgの 定量 サ ンプル100mgを,希 塩酸 でpHを2~3に 調整iし た蒸留水100m1に 溶解 し,更 に10m1の 濃塩酸 を加 え て,沸 騰10分 間加熱 した。 このサ ンプル を希釈 し,原 子 吸光分光分 析装置(日 本 ジャー レル ・ア ッシ ュ社AA -855型)を 用いて,原 子 吸光分析法 で定量 した。 4. 粗 蛋白,還 元糖の定量 粗蛋 白は ケル ダール法6),還 元糖はBertrand法7,8)に よ り定量 した。 5. 新 加熱混濁物生成試験 白糠,中 糠,赤 糠を原料 と し,糖 化剤 として米麹,酵 素剤 グル クS(天 野製薬)を 用 い,水 歩合 を種 々(300~ 1,500)に 変え,ウ ォーターバ ス中 で60°C,6時 間 の高
