36品種・系統の一番茶及び秋芽の7種類の遊離アミノ酸の分析を行い,各含量の差異や茶種ごとの特徴を明らかにした。7種類の遊離アミノ酸とも,秋芽の含量は一番茶の含量よりも少なかった。テアニン含量は一番茶で6.1930.70mg/g,秋芽で2.0015.03mg/gの範囲で,一番茶,秋芽ともすべての品種でアミノ酸中最大の値を示した。アルギニン含量は,一番茶で0.368.75mg/gの範囲で,品種間や茶種間の差が最も大きかった。アッサム雑種は,アルギニン含量が少なかった。茶期間でも大きな差があり,秋芽では,一番茶と比べて著しく少なく,0.081.87mg/gの範囲であった。'やぶきた'や玉露・てん茶用品種はアルギニン含量が多く,アルギニン/タンニン比とともに,うま味の強さの選抜の指標となることが示唆された。
