茶芽生 育 中や茶 製造 中 に起 こ る成 分変 化 を解 明す る ことは、茶 の栽 培 ・製造 技術 の改 善 の上 で重要 な こ とであ る。 そ こで、 これ まで の研究 で十 分 明 らか に され てい な い遮光 の有 無 に よる差 異 や、 変質 臭 の生成 等 に関 与 す る脂 質及 び おお い香等 に関 与す る含 硫化 合物 、 味 や香 りの生 成 に関与 す る遊離 糖等 の変 化 を中心 に 検 討を行 った。 また、 嗜好 の多 様化 に対 応 しこれ まで の香 りとは 異 な る香 りを持 つ茶 の開発 に資 す るため 、20品 種 ・ 系 統 よ り製造 した緑茶 につ い て香気 特性 の調 査及 び 香 気成分 の分 析 を行 い、 中国種 や ア ッサ ム雑 種 か ら 特 徴 ある香 りを持 つ緑 茶 がで きる ことを明 らか に し た。 さらに、加 熱 中に起 こる成分 の相 互反 応 に よる変 化 につ いて調 べ 、糖 とア ミノ酸 か ら新 アマ ドリ化 合 物 が生成 す る こ とや、 カテキ ンとア ミノ酸 か ら新褐 変 前駆物 質が 生成す る ことを明 らか に した 。
