Oils and their derivatives products are susceptible to oxidation due to the unsaturated fatty acids present in their composition. The oil and biodiesel obtained from oilseeds have low values of oxidative stability, varying with percentage of unsaturated fatty acids. This work aims to study the oxidative stability and characterization of biodiesel obtained from sunflower oil with different degrees of unsaturation. Three genotypes were selected for mechanical extraction of oil, two of the conventional type and a one high oleic type. Then the vegetable oil was submitted to transesterification reaction via methyl route using homogeneous catalysis. Biodiesel has been characterized for specific weight, moisture content, acid value, iodine value, oxidative stability and ester content. The biodiesels variety of conventional sunflower oils showed the following characteristics, low levels of oxidative stability, but the biodiesel oil type high oleic SYN 3950 had greater oxidative stability and iodine index lower values indicating lower unsaturation content. The chromatographic analysis of high oleic oil biodiesel confirmed the results, suggesting that it will resist a longer oxidation period.
