トリプシンおよびキモトリプシンの活性に及ぼす高圧処理の影響を検討した。両酵素共に600MPaで約92%の残存活性を示し, 両酵素とも非常に高い耐圧性を示した。さらに, 高圧処理を行った酵素の反応挙動の解析を行ったところ両酵素ともにKm値に大きな変化は認められなかったが高圧処理により最大反応速度 (Vmax) が小さくなり反応効率が低下した。このことより酵素の触媒部位周辺の構造が高圧処理によって影響を受けたものと考えられた。また, 酵素の構造は600MPaの高圧処理によって二次構造が変化し, 紫外部吸収スペクトノら表面疎水性の検討から, 特に酵素タンパク質の表面構造に変化が生じたものと考えられ, トリプシンおよびキモトリプシンともに600MPaの高圧処理によって酵素の表面構造の触媒部位周辺構造が影響を受け, 酵素の反応挙動が変化したものと推察された。
